About 2 weeks ago I was on the motorway driving at a steady 80, engine gently purring when I saw the infamous signal "engine in limp home mode". I slowed down to 60 than applied full throttle. The engine roared, went to 5000 rpm and in a matter of seconds I was over 90. Definitely not limp home mode. I arrived, than switched off the engine and restarted again : no signal. Since that day, I have done about 1000 miles without any further problem. The battery gives 12.7 volts at rest. Could it be the cold ? It was almost freezing on that day.

Something briefly glitched I would have thought.

The 308 and some XK8 had a TSB issue at one time relating to a throttle body issue. As I remember, the car could cut out as you perhaps slowed down for traffic lights at the bottom of a motorway slip road. Jaguar did replace a number of defective throttles on cars. Might be worth checking with a Main Dealer to see if that job was applicable to your VIN.

I used to get a few throttle issues on my early V8 S-type although that had a drive by wire arrangement as regards the throttle. You might look at any plugs and sockets around the throttle, pull apart and re-assemble a few times. These plugs and sockets are notorious for the odd corrosion on pin resistance hot spots. Working the plugs and sockets can disturb any connection issues that may be present. I always vowed to pull every plug and socket apart on an annual basis. Somehow I never got around to it.

Also check the MAF sensor for similar issues and take a look at the hot wire on the unit. If the side of the wire closest to the air filter is black with grime, clean with some aerosol switch cleaner to get the grot off. The MAF can sometimes spoil the fun if dirty.

Try some of those ideas and generally go around the engine bay checking various connectors and ground points.

10 months and 7000 miles later, the engine is still running fine and the "engine light" never reappeared...
