Could be a case for a little lubrication at the source of the squeak ,
Jaguar did have a special fluid for squeaks on dash boards and seats , but before you do anything check that the back of the passenger seat isn't touching the rear seat ,

its more of a metal noise than leather on leather
appears to be the back of the seat?

If you take the back of the seat off and also the hinge end caps you may find the culprit ,
possibly a cracked frame or hinge
