Does anyone know whether it is possible to replace a fixed back rear seat with a spilt folding rear seat? Has anyone ever attempted it?

Yes all things are possible. Have just replaced cloth interior of my 2.0 litre Classic (03) with leather interior from 2.5 litre SE model (02). Door panels were a straight swop - easy. Drivers panel had puddle light though wiring not present (I couldn't find it) so used reflector from original panel. SE panels have veneer and leather inserts and chrome speaker surrounds. Classic doesn't.

Both front seats electrically adjustable from SE (6 ways). Passenger seat in Classic is manual only, driver seat (2 way) electrically adjustable. Again straight swop. Wiring loom present for seats and both 30 amp fuses in situ in interior fuse box. Literally "plug and go".

Rear seat in Classic fixed. So with the back removed metal frame prevents use of folding rear seats. Inner part of frame cut in three places and problem solved. Hinges, brackets and seat releases all fit into place without any further alteration. Result = significant upgrade for a days work and £200.
