The first time I`ve heard of this fault, Steve.
As David says, not the right time of year to be doing this sort of work. Regret to say, I`d have shot the job out to my local indy! I`m getting too old for this type of caper!!

3.08v!? That is one dead battery!
To be reliable and have any chance of recharging, 11.5v is the lowest terminal voltage likely to achieve success. Anything less than 11.5v and I wouldn`t waste my time attempting a recharge. The battery is likely to constantly fail.

I`ve changed fob batteries without issue. A simple change and that`s been it. No reprogramming required.
It could well be that your new batteries are defective. Perhaps try batteries from an alternative source. Do check they are the correct voltage.

A non OE spec wheel, Steve. Check with your insurance company to make sure they will accept such a modification. Regular short runs whilst in long term storeage are to be avoided. The same on my old V8 S-stype and later on my XJR350. Both temp sensors failed at around 80k miles. The same and other symptoms as you describe. A duff sensor causes fault codes, difficult cold starts, an erratic temp guage and poor general running. Mixture control goes out of the window...... £8 or...
